Salary : £29952/annum plus service charge 5K, Paid OT

Our Client is a household name when it comes to Restaurants, Brasseries, Cafés or Bars, as well as their department stores throughout the country.

They urgently need an experienced Sous Chef for their restaurant in Bristol to assist in managing the kitchen to the highest standard, taking charge of the kitchen when required.

Job Objectives

*

Maintain a positive attitude towards staff, customers and any external contact. Deal effectively with issues and escalate to management where necessary

*

Manage the kitchen in the absence of senior chef

*

Assist with disciplinary procedures as required

*

Effectively manage levels of Mise-En-Place, ordering, cleaning, labels and preparation. Guide and support the team to carry out these duties to the required standard

*

Carry out staff training on a daily basis, identifying where further training may be necessary and implementing as required

*

Manage and organise functions and special events, working efficiently within a team to meet the standards set by senior chefs and provide excellent customer service

*

Form a productive relationship with FOH, bar staff, maintenance, stock movement and suppliers, communicating regularly via meetings and emails to allow smooth operations

*

Assist with the recruitment process as required

*

Effectively manage portion sizes and ingredients used, ensuring consistency with costing of dishes, keeping within GP margins. Guide and support the team to ensure these duties are carried out to the required standard

Manage the kitchen’s stock rotation, ordering and Mise-En-Place to keep within GP margins

*

Maintain the safe use of equipment, reporting any faulty or damaged equipment to relevant service-maintenance companies and informing management where necessary

*

Ensure all health and safety practices are adhered to, as well as food hygiene regulations, HACCP records and security procedures. Ensure your team adhere to these procedures and report any issues to management as necessary
