We are looking to recruit a fun, enthusiastic catering manager to work at Streamvale Open Farm, in our catering trailer and in our cafe.
The catering trailer opens into our Burger Barn and is very popular with visitors to the Open Farm. We offer chips, burgers, sausages and chicken strips with various dips and sauces. The cafe is also popular with visitors and offers homemade snacks, lunches and specialty teas and coffees. It also sells our own homemade ice cream.
Essential Criteria
* Hands on experience managing a fast food outlet or catering trailer using a traditional chip shop fryer. Including ordering stock and stock control. Minimum of two years
* Experience of managing and training staff including rotas. Minimum of two years.
* Experience of being responsible for end of day takings procedure
* Experience of working in a pressurized environment
* HACCP level 3
* Food Safety level 2
Desirable Criteria:
* Experience of themed catering
* Experience in drawing up and adhering to financial controls including pricing and wastage.
* Experience in dealing with and resolving customer complaints
* Experience in dealing with environmental health ensuring that health & safety, food safety and also hygiene procedures & standards are maintained and followed.
* Customer service experience in fast paced food environment.
Catering Manager Day to Day Management:
* Preparation and cooking of food.
* To be responsible for opening and closing duties, stock control and staff training and staff rotas.
* To ensure the highest standard of food quality, presentation and service are achieved and maintained at all times.
* To maintain good communications and working relationships with customers and all staff.
* Ensure all catering adheres to a working HACCP plan whose documentation is kept up to date and reviewed regularly and comply with all the requirements of current legislation.
* Implement “Good food hygiene” principles in the areas of cross contamination, cleaning, chiling and cooking
* Knowledge and awareness of food allergies
Additional information:
* Hours per week total at least 35 and up to 50 depending on seasonal demand. (Halloween, Easter and any other busy periods)
* Working on Saturdays, Sundays, bank holidays, themed weekends including some evenings until 9.30 / 10 pm will be required
* Annual holiday entitlement is 28 days including public holidays. These holidays should be taken in November, January or February where possible.
