Job Description
Preparation and execution of gastro style dishes.
Spearhead the development of the menu, meticulously curating it to reflect seasonal ingredients, culinary trends, and customer preferences.
Organise and manage the kitchen efficiently, ensuring food safety, cleanliness, and strict adherence to health and safety regulations.
Management of inventory (to include ordering, receiving, storage of all supplies to minimise waste and preserve freshness).
Establish, monitor, and review budget and gross profit parameters for the Kitchen.
Manage the strategic procurement of food supplies to accommodate any day-to-day menu and special functions (such as weddings).
Train, mentor, and motivate kitchen staff, ensuring they enhance the skills and knowledge to perform their roles effectively.
Collaborate closely with the management team to implement measures for controlling food costs, monitoring portion sizes, waste reduction strategies, and efficient use of ingredients.
Occasionally interacting with customers to understand their preferences and promptly address any issues/ or concerns they may have.
To develop and implement Health & Safety procedures that comply with up-to-date legislation and ensure the same are clearly communicated, effectively monitored, and regularly reviewed. There will be additional duties required within your remit of your role, which will be designed and consulted with you by your direct report.
The Successful Applicant
It is essential to have/display the following:
National Vocational Qualifications (NVQ) or Diploma in Cookery Level 1 or 2.
Food Hygiene Certificate level 2 or 3.
An already experienced chef within a Food and Beverage or Leisure business.
Able to manage your own workload and the work of others concurrently.
Performs well under pressure/time constraints, alone and cohesively as a team.
Is creatively innovative to create new dishes demonstrating their knowledge of a variety of foods and ingredients.
Maintain an extremely sanitary environment while working.
Strong communication skills and ability to accept criticism.
Holds a full UK driving license.
Able to work weekends and bank holidays. It is desirable to have the following:
Food Allergen Awareness Certificate
Previous work experience in an accommodation or lodge hire business What’s on Offer
£26-28k Salary dependant on experience.
35 hours, across 5/7 days.
