Food Technician – BROMLEY

MAIN PURPOSE OF THE JOB: 1. Manage the efficient running of the storerooms, receiving of goods, compilation of orders, issuing of stock (i.e. food and disposables), recording and stock control. 2. The functions and duties listed below must be undertaken strictly in accordance with hazard analysis and critical control procedures (HACCP) made under the Food Safety (General Food Hygiene) Regulations 1995, the Food Safety Act 1990 and other current health and safety legislation and good practice.

KEY RESPONSIBILITIES OF THE JOB HOLDER: To liaise with the Lecturers in relation to recipes and associated orders and achieve the best costing for all products. To manage the finances for both the training kitchen and The Shop, ensuring value for money. To manage the credit card and ensure associated paperwork is submitted by the deadlines set by finance To undertake and co-ordinate annually a thorough cleaning of the training kitchens, including the emptying and cleansing of all food containers. To ensure the storage of cleaning products as per manufacturers guidance and have a full understanding of COSHH and safe systems of work. To ensure a safe working environment in accordance with Health and Safety Regulations and to follow procedures for reporting accidents and incidents as soon as practicable after their occurrence. To organise and co-ordination the washing/drying/ironing of all kitchen linen, cleaning and drying cloths at the correct temperatures and record details on requisition sheets. To regularly undertake temperature checks of the fridges and freezers in line with the Food Safety (Temperature Control) Regulations 1995 and maintain accurate records as required. 2 To ensure that all food supplies are received, stored issued and disposed of correctly and with appropriate labelling as per EU Food Information Consumers Regulations. To ensure that equipment is in good working order, seeing that servicing is carried out and reporting faults to the relevant parties. To order and take delivery of new small equipment and maintain the safe and secure storage of all the equipment in the Academy. Preparing items for classes, including the accurate weighing of produce, especially fresh food, issuing of kitchen equipment and dealing with last minute requests. Receive returned goods from classes and ensure the correct storage of excess produce and record details on requisition sheets. To package and label appropriate cooked and non cooked food items for re-use. Minimise surplus food through effective budgeting and purchasing.
