Production Chef

We are currently working with a leading local manufacturing company to recruit some key operatives into the team
Job Purpose
Loading ingredients in to large cooking vessels, following recipe sheet and once cooked, sending through to production.
Responsible for making sure all temperatures of product are within food safety guidelines. To personally ensure all aspects of due diligence (Food Safety, Quality and Legislation) are adhered to. The role also covers clean downs and basic maintenance.

Key Accountabilities & Responsibilities
Completion of any paperwork required
Conduction and completion of CCP checks to ensure technical standards are met
Take action where appropriate and refer any products out of specification to the Technical team
Ensure all process documentation is completed accurately and diligently
To work within the quality controls set and report any goods that are not up to the specified quality controls
Monitor pack temperatures throughout productions
Save samples for micro testing and taste panel form every product
To report any issues that could have implications on cost
To monitor wastage due to split or poorly packed ingredients
To understand the implications of wastage and help minimize wastage.
To keep up with the production plan via packing to acceptable speeds
To ensure all products are packed correctly to specification
Ensure that the pot presentation is up to standard
To personally ensure that all aspects of Due Diligence (Food Safety, Quality and Legislation) are adhered to.
Manage giveaway and yields to acceptable levels whilst also minimising waste
To personally take the appropriate and reasonable action in the event of witnessing a breach (or potential breach) of Food Safety, Quality or Legislation
On occasion work in other departments of the business or perform other reasonable duties as per request of your manager
Knowledge & Specific Job Skills
Education – Basic level of numeracy and literacy.
Experience – No experience needed, but expected to be competent after 12 weeks training.
Decision making -The post holder will make a judgment of when to call for assistance from a Supervisor, an Engineer, the Technical Department or Management. Decisions made are of a routine nature and are communicated to a Supervisor/Manager.
Some decisions taken have a cost and loss of business impact with regards to food safety and quality of product.
Equipment – The post holder will detect faults and call for engineers’ assistance. Daily use of packing machinery, company systems and detection systems. Maintenance and hygiene of this equipment also.
Communications – Daily internal verbal communication with team, Supervisor, Manager and other departments. Written communication is in the form of quality paperwork completion etc to ensure due diligence and completion of computerized systems
Mental effort – Must sustain concentration over long periods of time and maintain knowledge of running various machinery. Must be able work and count quickly and accurately under pressure.
Responsibility – Skilled staff required to help with integration of new starters and agency staff.
Physical effort – A lot of physical effort is required. Lifting, pulling and pushing of heavy loads requires an awareness of Manual Handling. Post holder is on their feet for the majority of the shift. Must be able to work at high speed which requires physical effort maintain several pieces of equipment at one time. Work can be in hot and chilled environments.
Dexterity – High level of hand eye co-ordination is required to ensure correct products are packed. Post holder is required to work at speed ensuring accuracy at all times. Must be able to carry out quality checks i.e. metal detector checks.
