The Company:

Role & Responsibilities of the Retail Catering Manager:
* Work with the Business Development Team in the delivery of retail catering across the estate.
* Oversee effectiveness of kitchen production for all areas, including cost and staff resources.
* Manage and coach Café Managers to achieve operational and financial performance.
* Ensure the successful implementation of menus, recipes, production processes to ensure that food and beverage is prepared, cooked and presented to agreed standards.
* Work alongside the marketing department in creating ‘special offers’ to increase retail sales and build a regular customer base.
* Utilise the EPOS till system to monitor sales, marketing initiatives, and creating targets.
* Have overall responsibility for the retail catering team including recruiting new team members in line with budgets and business needs. Oversee staffing levels and task delegation to ensure they are appropriate in all areas while developing and mentoring the team.
* Look at continuous improvement areas across all parts of the business, and particularly around stock levels. Ensure regular stock takes are being completed.
* Oversee the administration requirements of the kitchens.
* Ensure standard operating procedures and robust processes are in place across all areas of food and beverage.
* Carry out and comply with the prevention and control of infection as per policies and procedures.
* Ensure that all areas within the cafes and mobile drinks unit, are in line with full legislative compliance to achieve excellent standards, meeting the current food safety standards.
* Attain and maintain 5* food hygiene ratings at all food premises.
* Responsible for Food Safety documentation, Hazard Analysis and Critical Control Points updating where necessary for inclusion with Organisational Operational Policies.
* Undertake regular audits of processes/paperwork to ensure safety standards are being met.
* Support and control management of standards of cleanliness and Food Safety across all areas.
* Achieve the gross profit percentage for food and staffing as agreed. Ensure action plans / innovations put in place to remain on budget.
* Produce finance and performance reports for the senior management team on a monthly basis.
About You as the Retail Catering Manager:
* 1-2 years’ experience in a similar role with a hospitality or food hygiene qualification
* Able to think strategically, looking at future planning and development, while being innovative and creative
* Experience with a P&L including setting financial targets and budget management.
* Ability to identify commercial F&B offerings that are creative whilst remaining within budget
* Able to implement systems and consistent standards to ensure quality of product and service
* Strong and proven leadership skills and develop future leaders
* Ability to inspire and lead your team to deliver best service possible while dealing with any HR-related queries or matters.
* Ability to stay calm under pressure
* A passion for delivering excellent service and standards
* Flexible in your approach and have the ability to work on own initiative
