Knowledge and awareness of H&S, hygiene and HACCP procedures

Daily duties are likely to involve:-
Working 37 hours per week, 5 days out of 7. Shifts patterns are typically 06:00-14:00, 07:00-15:00, 14:00-22:00.
To produce and deliver high quality food to our customers, in accordance with the agreed standards.
Assist the senior head Chef by being creative, flexible and proactive in reviewing and developing new menu concepts and product standards.
Be involved in assisting the senior head Chef in costing and portion control in the production of dishes to ensure the GP is met.
Monitor and maintain all hygiene and safety standards with particular emphasis on health and hygiene. To ensure all HACCP procedures are followed and continually audited.
Ensure all equipment is maintained within the kitchen and ensure control of contractor’s procedure is followed for all call outs and repairs.
Maintain and where necessary, make suggestions to improve standards.
Be actively involved with looking at hospitality trends to ensure we deliver the best products within our means and in line with customer requirements.
To ensure all correct waste management systems are followed in allocated section, and work with the kitchen team to achieve this objective.
